Our Specialities
It is one of the stars of our local cuisine. It’s the main ingredient of some of our most traditional and festive dishes. The Anyell d’Eivissa certificate, is the distinctive mark that serves as guarantee that these lambs are born and raised i nIbiza according to the traditional way, small herds roaming free in the fields. Free-range lambs with a natural diet based primarily on grass, is the key to the quality of its meat and it also provides a sustainable model of production in keeping with nature.
The Ibizan black pork is an autochthonous breed of pig from the Pitiusas Islands (Ibiza and Formentera). It’s distinguished by its black hair and concave contour head and specially because it’s DNA differs from other similar breeds.
At our butcher’s we select the best national beef, native breeds from the Dehesa of Estremadura, the Catalan Pyrenees or the Galician Rubia. Slow growing animals, raised outdoors and fed with the best pastures give rise to a meat with flavour, texture and perfect marbling.
The Ibizan free-range chicken has always been an important part of rural Ibiza, providing delicious meat and eggs to homes and as an important source of protein in the Ibiza diet. These free-ranged chickens have been farmed on the island eating whole grain. No doubt, this adds that extra special flavour and enhances your dishes.
